I've noticed the same trend Callie Thompson mentioned - vegan is in and vegetarian seems to be out. I have a few guests who cannot eat gluten, and while gluten-free options are becoming more available, it's still difficult to find caterers who offer gluten-free dishes. It definitely costs more to have a special menu for some guests, but it's worth it to us, as we really want these friends there to celebrate with us.
